Defects · Quality Inspection +

Screen · Washed · Natural +

SCA · CVA · Cupping +

Lot · Moisture · Contract +

Glossary · International Sources +

  • Defect Count:

Grading by originCoffee grading systems around the world+

Coffee grades vary between countries. They may describe defects, bean size, altitude or a combination of criteria.

  • Ethiopia: G1 to G5 are commonly traded grades and must be interpreted within the applicable grading system.
  • Kenya: AA, AB and PB are sorting designations primarily associated with bean size and shape.
  • Colombia: Supremo and Excelso are commercial designations linked to bean size specifications.
  • Brazil: NY 2/3 and Screen 17/18 may appear in descriptions combining defects, size and cup characteristics.
  • Central America: SHB, SHG and EP are used, with details varying by country.
G1, AA and Supremo should not be treated as equivalent grades.
Defects and physical sortingDefects · Quality Inspection+

Defects are assessed using a defined sample and inspection standard. A written grade alone does not provide a complete physical quality assessment.

  • Severe defects: such as fully black or severely damaged beans, as defined by the applicable standard.
  • Other defects: such as broken or immature beans, depending on the inspection system.
  • Lot consistency: the uniformity of bean size, condition and sorting.
Ask for the defect count, sample weight, inspection method and acceptance limits, not just the commercial grade.
Bean size and processingScreen · Washed · Natural+

Bean size: Screen size is used to sort beans. Screen numbers generally express sieve openings in units of 1/64 inch.

Washed: fruit material surrounding the seed is removed through processing steps that involve water.

Natural: the coffee fruit is dried around the seed before hulling.

Honey: seeds are dried with some of the surrounding mucilage retained.

Processing and size are product specifications. They do not independently establish sensory quality.
Sensory assessment and qualitySCA · CVA · Cupping+

Sensory assessment examines aroma, flavour, aftertaste, acidity, mouthfeel and other characteristics using a defined protocol.

In the traditional SCA 100-point system, an 80-point threshold was used to distinguish specialty coffee. This does not mean that every coffee is assessed in the same way or that an origin grade corresponds to a cupping score.

The Coffee Value Assessment (CVA) framework separates physical assessment, sensory description, sensory impression and extrinsic information about the coffee.

When comparing cupping results, check the assessment protocol and interpret scores in context.
Shipment specificationsLot · Moisture · Contract+

Before a commercial agreement, establish:

  • Coffee type, origin country, region and grade.
  • Processing method, crop and lot number, where available.
  • Moisture, defect limits and sorting specifications.
  • The reference sample and inspection and acceptance procedures.
  • Quantity, packaging, price, delivery and payment terms.
The agreed specifications and approved sample define the transaction, rather than the marketing description alone.
Glossary and referencesGlossary · International Sources+
  • Grade: a classification within a specified grading system.
  • Screen: the sieve size used for sorting beans.
  • Defect count: the number of defects in a defined sample under a stated methodology.
  • Cupping: structured tasting used to assess coffee.
  • Lot: an identified commercial batch.
  • EP: an export preparation designation interpreted according to the origin specification.
